    What started it all back home. Pâté, Vietnamese pork cold cut, & pork floss on a bed of pickled veg, cucumber, herbs, fresh chilli.

  • Thit Nuong

    £ 8.45

    Charcoal-grilled thinly sliced pork, on a bed of pickled veg, cucumber, herbs, & fried shallots.

  • Tofu Ran (VG)

    £ 6.95

    For the non-meat-eaters or just something different. Deep-fried pockets of tofu on a bed of pickled veg, cucumber, herbs, & fried shallots.

How the kitchen works

The phin

How the phin works.

The phin is the small metal filter that sits on top of the cup. Four steps, four minutes.

  1. 01

    Grounds

    Fifteen grams of coffee, ground a little finer than for a cafetière, into the filter. The little metal disc rests on top of the grounds. Rest it, do not press it.

  2. 02

    Bloom

    A splash of water just off the boil, enough to wet the grounds. Wait thirty seconds while they swell and settle.

  3. 03

    Drip

    Fill to the top, lid on, wait. Four to five minutes, about a drop a second. No pump, no pressure, no hurry.

  4. 04

    Pour

    Onto sweet condensed milk. Stir until it turns the colour of a kraft paper cup, then pour over ice.

M1

A name we kept.
A café we built.

M1 began as the family’s nail salons. The name came with us, and so did the standard. Now it sits over a coffee counter and a kitchen by the sea. Two letters, one standard.
